Farmers Harvest Vegetable Stew

There's something grounding about a hearty, home-cooked stew - especially one filled with vibrant, seasonal vegetables fresh from the farmers market. 

Ingredients:

1/4 cup olive oil

1 large onion, diced

3 cloves garlic, minced

4 tomatoes (1 pound), finely diced

1/2 teaspoon grated peeled fresh ginger

2 carrots, peeled, halved lengthwise and cut into 1-inch chunks

1 yellow bell pepper, seeded and cut into 1-inch-thick slices

1 teaspoon Bragg Liquid Aminos or coconut aminos

1/2 teaspoon sea salt

1 pound green beans, cut into 1-inch pieces

1 zucchini, quartered lengthwise and cut into 1-inch chunks

Instructions: 

  1. Heat olive oil in a large pot. Saute onion and garlic until translucent.
  2. Add carrots, sweet potato, zucchini, tomatoes thyme, and paprika. Stir well.
  3. Pour in vegetable broth. Simmer 25 minutes or until vegetables are tender
  4. Stir in greens until wilted. Season to taste.
