Ingredients:
1/4 cup olive oil 1 large onion, diced 3 cloves garlic, minced 4 tomatoes (1 pound), finely diced 1/2 teaspoon grated peeled fresh ginger 2 carrots, peeled, halved lengthwise and cut into 1-inch chunks 1 yellow bell pepper, seeded and cut into 1-inch-thick slices 1 teaspoon Bragg Liquid Aminos or coconut aminos 1/2 teaspoon sea salt 1 pound green beans, cut into 1-inch pieces 1 zucchini, quartered lengthwise and cut into 1-inch chunks |
Instructions:
- Heat olive oil in a large pot. Saute onion and garlic until translucent.
- Add carrots, sweet potato, zucchini, tomatoes thyme, and paprika. Stir well.
- Pour in vegetable broth. Simmer 25 minutes or until vegetables are tender
- Stir in greens until wilted. Season to taste.
