Lemon Garlic Herb Salmon

Ingredients:

  • 2 salmon fillets
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme
  • 1 tsp fresh dill
  • Salt & pepper to taste

For the Side:

  • Steamed asparagus or green beans
  • Quinoa or brown rice

Instructions:

Preheat oven to 400F (200C) and place salmon on a lined baking sheet

Mix olive oil, lemon juice, garlic, thyme, dill, salt, and pepper. Brush over salmon.

Bake for 12-15 mins or until salmon flakes easily with a fork.

Serve with steamed greens.
