Ingredients
2 medium sweet potatoes, sliced into rounds
1 ripe avocado, sliced
2 tablespoons olive oil
1 tablespoon pumpkin seeds
Juice of ½ lime
Sea salt and black pepper to taste
Optional: fresh cilantro or parsley
Instructions
Preheat oven to 400°F. Toss sweet potato slices with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized. Arrange roasted sweet potatoes on a plate and top with sliced avocado. Sprinkle pumpkin seeds over the top and finish with lime juice, salt, and pepper.
Garnish with fresh herbs if desired.
