Sheet-Pan Turmeric Cauliflower & Apples with Lemon Yogurt

Sheet-Pan Turmeric Cauliflower & Apples with Lemon Yogurt

Ingredients (serves 2)

1 medium head cauliflower, cut into florets
1 crisp apple (Honeycrisp or Fuji), cored and cut into wedges
1/2 red onion, cut into wedges
2 tbsp olive oil
1 tsp ground turmeric
1/2 tsp ground cumin
Sea salt and black pepper, to taste
1/2 cup plain Greek yogurt (or coconut yogurt)
Juice and zest of 1/2 lemon
1 small clove garlic, grated
2 tbsp toasted pepitas or sliced almonds
A handful of fresh parsley or cilantro, chopped

Instructions

Preheat the oven to 425°F. Toss the cauliflower, apple, and red onion with olive oil, turmeric, cumin, salt, and a good crack of black pepper.

Spread everything out on a baking sheet so nothing is crowded — that's how you get the golden, crispy edges.

Roast for 25 minutes, flipping halfway, until the cauliflower is tender and caramelized and the apples are soft and jammy.

While it roasts, stir together the yogurt, lemon juice, lemon zest, garlic, and a pinch of salt.

Spread the lemon yogurt onto a platter or two plates and pile the warm cauliflower and apples on top.

Finish with pepitas and fresh herbs, and dig in while it's warm.

Apples are crisp and sweet right now, and this one-pan golden cauliflower is the kind of cozy, mostly hands-off Sunday reset that feels nourishing without weighing you down. Pair it with our Tropical Surprise  its turmeric echoes the golden spices on the plate, while the pineapple, orange, and a little ghost pepper heat bring a bright, anti-inflammatory kick that's perfect as the weather cools.
