Watermelon, Feta & Mint Salad with Chili-Lime

Ingredients (serves 2)

4 cups cubed seedless watermelon
1/2 cup crumbled feta
1/4 cup thinly sliced red onion
1/4 cup fresh mint leaves, torn
Juice of 1 lime
1 tbsp olive oil
1/4 tsp chili flakes or a pinch of tajin
Flaky sea salt, to taste

Instructions

Soak the red onion in the lime juice for 5 minutes while you prep everything else. This helps takes the edge off and turns it a pretty pink.

Arrange the watermelon on a plate or shallow bowl.

Scatter the feta, mint, and soaked red onion over the top.

Drizzle with the olive oil and the lime juice from the onions.

Sprinkle with chili flakes (or tajin) and a pinch of flaky salt.

Serve right away, ice cold — that's the whole point.
